Easy Skillet Ground Beef And Rice Dinner

This delicious one pan Skillet Ground Beef and Rice Dinner is a meal the whole family will love. 

When it comes to preparing meals for my family, nothing beats simplicity. I love this simple ground beef and rice dinner. It’s made with ground beef, onion, peppers, garlic , tomato, rice, and topped with cheese.  It’s a delicious meal that’s full of flavor and can be prepared in less than 30 minutes. 

If you’re short on time and  looking for a tasty meal that you can throw together pretty quickly, this Skillet Ground Beef and Rice dinner is for you!

This is not a complicated meal to prepare.  And you probably have most of the pantry ingredients on hand already.  

Beef and rice are your main ingredients and you can season it up to suit your family’s taste buds.  You can add additional vegetables if you’d like.  If you’re a fan of Mexican food like me, add a little more cumin and some chili powder.  

How to prepare Skillet Ground Beef and Rice

Ingredients: 

1 Tbsp Olive Oil

1 lb Ground Beef

1 Medium Yellow Onion, diced

1 Medium Red Bell Pepper, diced

1 Green Bell Pepper, diced

3 Cloves Garlic, minced

1 Tbsp Pepper

1 Tbsp Onion Powder

1 Tsp Garlic Powder

1 Tsp Cumin

1 Tsp Salt

1 ½  Cups Low Sodium Beef Stock 

1 10 oz Can Rotel Diced Tomatoes With Green Chilies

1 Cup Long Grain Rice

1 Tbsp Worcestershire Sauce

1 ½  Cups Shredded Cheddar or Cheddar Jack Cheese

Fresh Chopped Parsley (optional)

Directions: 

1.Rinse and chop your vegetables. Set aside.


2.In a large skillet, heat the oil over medium heat. Season your ground beef with the salt, pepper, onion powder, garlic powder, and cumin. Brown over medium heat. Drain and return beef to the stove on medium heat.


3.Stir in the minced garlic, onion, and peppers. Continue to cook for another 3 to 4 minutes or until the onions and peppers have softened.


4.Add the beef broth, rice, Worcestershire Sauce, and Rotel to the skillet and stir until it is well combined.

5.Bring your ingredients to a boil, reduce heat and cover. Let simmer for about 25 minutes or until the rice is tender.


6.Remove the skillet from the heat and sprinkle generously with cheese. Cover the skillet and allow the ingredients to rest for about 5 minutes or until the cheese is nice and melted.


7.Garnish with chopped parsley if desired.

Enjoy it while it’s hot!

Frequently Asked Questions

Can I use a different type of meat?

Yes. Feel free to use ground turkey, ground chicken or ground pork. If you use ground chicken, consider adding a little extra seasoning to help increase the flavor.

What type of rice works best in this recipe?

I like to use long grain rice in this recipe but you can use most any rice, however you may have to adjust the cooking time according to the type that you use.

Recipe Tips

Store any leftovers in a tightly sealed container in the refrigerator for up to 3 days.

Make a flavorful burrito by serving leftovers wrapped in flour tortillas.  

Make delicious tacos using leftovers and top with lettuce and sour cream. 

Turn this meal into Nachos. Layer tortilla chips in a pan, and add the beef mixture.  Top with nacho cheese or shredded cheese, tomatoes, green onion and sour cream.  This is one of my family’s favorite ways to enjoy nachos.
